The Engine 2 Diet is a plant-based elimination diet created by Texas firefighter, Rip Esselstyn. Over the course of 28 days, you'll remove processed foods, dairy, meat and excess oil from your diet. What's left to eat on the vegetarian plan? Plenty of whole grains, beans, soy-products, fruits and veggies. There's also a firefighter-inspired exercise program to follow.
